Cornbread and Sausage Stuffing (I’m skipping the mushrooms, assuming we can find sourdough bread…B and E are on a quest for me right now…otherwise it may just be cornbread or a last minute variation on this).

Happy Thanksgiving! I made our cornbread stuffing last night ;). We’re having mac and cheese (for me) and chicken (for him). Oh. and we’ve added a tropical twist – fried plantains this year.

Do you have a recipe for fried plantains that you like? Have had them at restaurants, but never attempted myself.
Easy peasy. Hope this isn’t too late… 1. Slice the plantains into rounds or on an angle for more surface area, 2. Butter up a non-stick skillet. 3. Once the butter is bubbling, law down the plantains. 4. Once the fruit has browned/caramelized on one side, flip over and brown the other side.
You can top with more butter or, do what we did last night, sprinkle with chopped chili padi.
Got it late for Thanksgiving, but I’ll be sure to try making it soon regardless. Sounds delish.
